If you still have some tahini from the hummus recipe, know that it makes an excellent ingredient for salad dressing. You can even add miso for extra depth (in place of soya sauce), if you have some on hand.
Ingredients
4 T tahini
4 T olive oil (opt. if not using, suggest 4T lemon juice)
2 T lemon juice
1 T soya sauce
salt and pepper
1 cl garlic
1 pinch paprika
1 T herbs (ie. parsley, chives, coriander, etc) (optional)
Instructions
Stir and mix all ingredients in a bowl. Add water if necessary, to create a somewhat thin, pourable sauce. Dress lettuce, avocado, etc. Can be served refridgerated, and kept in the fridge a few days.
